Method
In a pan gently heat the oil, add the garlic and cook for 2 minutes.
Add the tomatoes and continue to cook for another 10 minutes – stirring occasionally, until the tomatoes are thick and pulpy.
Add the basil and stir through to wilt.
Season with salt and pepper to taste.
Remove from the heat and blend in a blender, food processor or with a stick blender. If not using straight away store it in a clean jar.
